Pseudo Quiche

This is not a real Quiche since it does not have any crust, but I do not know what else to call it.

Gather the following:

5 Pie Pans

bullet

2 large mixing bowl

bullet

Various spoons to mix and pour materials.

15 Egg Equivalent (I use Better than Eggs)

bullet

2 Large Tomatoes

bullet

3 Cups Portabella Mushrooms

bullet

2 Groups Green Onions

bullet

2 Cups Roasted Red Peppers

bullet

4 Garden Burger patties

bullet

14 oz Washed Spinach

bullet

1 Brick Cheddar Cheese (8 oz) Shredded

bullet

1.5 Cups Milk

bullet

1 Package Cornmeal Muffin Mix (to make 8 or so Muffins)

Preparation:

  1. Preheat oven to 350

  2. Slice, Dice and cut up the:

    bullet

    Tomatoes

    bullet

    Mushrooms

    bullet

    Green Onions

    bullet

    Red Peppers

    Do not cut them up too fine.  You will want to be able to identify 'chunks'

  3. Put the cut veggies in mixing bowl and 'cook' in microwave until hot. (Will have liquid)

  4. Heat up garden burger patties so they are warm.

  5. Dice up garden burger patties and put in veggie mix

  6. Put spinach in other mixing bowl and heat till they wilt. (and loose volume).

  7. Add veggies mix to spinach so that you have veggie liquid in one bowl and all the solids in other.

  8. Add Eggs, and Cornmeal mix and Milk to liquid bowl and mix it all up to dissolve Cornmeal.

  9. Add Cheese to the 'solid' veggie mix..

  10. Divide the solids up between pie pans.

  11. Add the liquid mix over the solids in the pans and move the solids about a bit to intermingle/distribute the material about the pans.

  12. Bake at 350 for about an hour or until eggs are cooked through.

  13. Let cool.

Notes:

Material will 'puff up' a little while cooking.

You can try thicker pans or casserole dishes, but they take longer to cook through and will expand more when cooking.
